A vacuum cooker in general consists of two parts: a steel inner pot and an outer insulation pot. When using the vacuum cooker, we cook the food with the inner pot. By cooking with the normal way for a period of time, we then move the inner pot immediately into the outer insulation pot.
The outer insulation is designed to minimize the loss of heat. It insulates the food inside from the external environment. The food inside will have a long time being kept at high temperature. To cook with a vacuum cooker, it is regularly for the food or soup that must cook for very long time. Therefore, you may save a lot of fuel. It is designed to keep away the inner pot with the exterior environment. Therefore, the water will not evaporate or boil away when cook, the food will not be burnt.

Many people who have a vacuum cooker at home, they love it for the time-saving, convenience and security while cooking. Some people never cook with a vacuum pot because they think the taste of food will not be the same as those cooked by the traditional fire stove.
In fact, if we know how to use it the definite way and the advantage of a vacuum pot, it is clear that you can have the same tasty food.
As mentioned in the above, the outer insulation pot is designed to minimize the loss of heat. It insulates the food inside from the external environment. The food inside the vacuum cooker will have a long time being kept at high temperature. Therefore, if we use the vacuum cooker for cooking, it should taste the same as the traditional cooking method.
Usually I will cook the ingredients with the inner pot for at least half an hour, then, immediately place the inner pot into the vacuum outer pot before I leave home to work in the morning. This ensures the climatic characteristic inside the pot can be kept as high as it was cooking. When I get back in the evening, I will cook the food for other half hour before serving; this is to enrich the ingredients' flavor. This means the total cooking time is around 8-10 hours.
Vacuum cooker is one of my needful tools in my kitchen. Also its convenience, time-saving and environmental protection. The most foremost is that I do not have to monitor the fire while cooking. I can even boil the porridge before go to bed, and I will have a tasty porridge as my breakfast in next morning.
